Blog: Health Boosting Blueberry Delight


This easy recipe including frozen, organic blueberries, is full of amazing anti-oxidants and phytonutrients and works well as a snack, breakfast, or even as a dessert. It is one that you can stock up on the ingredients, and they will keep well without spoiling.

Frozen blueberries are so nutritious, as nutritious as fresh, and keep very well in the freezer. The other ingredients are super nutritious as well and can be pantry staples that you can use in many other dishes. If you want to try it for breakfast, you can pair it with some eggs, or add a scoop of collagen peptides to the warm blueberries and mix for added protein.

Delicious for breakfast, a snack, or even as a dessert. I hope you enjoy trying this one, it is one of my families favorites!

Health Boosting Blueberry Delight

Ingredients

  • 1 Cup of frozen wild or organic blueberries
  • Handful of raw walnuts, pecans or almonds…or a mix
  • 1 tsp of coconut oil
  • 3 – 4 T of organic, unsweetened coconut flakes
  • Stevia or monk fruit/stevia blend to taste (optional)
  • 1 tsp. Chia seeds
  • 1T Dark Chocolate Chips (optional, use when making dessert)

Instructions

Pour blueberries and coconut oil into a glass or ceramic bowl and heat gently in microwave at 50% power until warm. Add stevia to taste if you like it sweet, I use 1/2 packet and mix well. Add nuts and chia seeds and mix gently. Top with coconut flakes and chocolate chips if desired, and serve.
